Tender with a pleasant gnawability and great flavor, these racks of pretty pink pork are the first thing chef and owner James Porter should haul to safety if the joint ever catches fire. We recommend you order a rack to go with an extra piece of cornbread on the side. Whatever you do, don't add any extra sauce. Enjoy.
