Just got a hold of the menu for a new Mediterranean-inspired restaurant that's in the works. It's called Calistro California Bistro, and it's scheduled to open the first week of August at DC Ranch Crossing, 18221 N. Pima in Scottsdale.
Seasonal, organic ingredients from local and regional farms will be a focal point at the "green concept" restaurant, where the operations and even the building itself will make use of environmentally friendly practices.
Dinner will feature shared plates, flatbreads baked in a wood-burning oven, organic salads, and entrees priced mostly in the twenty-something-dollar range.
Look for Za'atar-spiced local pork tacos with sweet peppers and cucumber in pita; harissa-marinated fire-roasted shrimp with heirloom tomatoes, black olives, and sheep's milk feta; miso-marinated wild salmon with braised fennel and artichoke, warm pepper salad, and preserved lemon emulsion; and rack of lamb with spiced carrot puree, braised market greens, preserved lemon, and almonds.
