I went for the miso ramen, filled with sliced pork, fish cake, scallions, and a tiny bit of pepper. The broth was nice and flavorful -- the real deal, something you'd want to slurp even after you're done with the noodles. It would be nice, however, if the restaurant provided traditional garnishes like pickled ginger, sesame seeds, and shichimi togarashi at the table.
To drink, I had a delicious taro boba. The only thing that was strange was how the boba and coffee drinks had to be ordered on a separate half of the restaurant from the food counter.
My friend had the signature Republic Ramen, with all of the same goodies (pork, fish cake, etc) in a spicy red chile broth. If you're a fan of Korean food, give this a try for the same kind of tongue-searing pleasure.
We also had some crispy fried pork gyoza to share. Two bowls of soup and an order of the dumplings totaled slightly less than 20 bucks, and it was pretty tasty. We'll be back for more, I'm sure.
