9. Escargot en Croute from Christopher's and Crush Lounge
It's a shame so many people turn up their noses at the idea of digging into a plate of snails because the version served at Christopher's and Crush Lounge in Phoenix is a real delicacy. In this preparation, the chef cooks the snails in butter, herbs, and garlic before covering the whole dish is a layer of pastry dough. When the whole thing is removed from the oven you have a sort of escargot pie.
Breaking through the sweet, flaky dough reveals several snails, each swimming in their own bath of buttery goodness. The texture of the pastry contrasts the slightly chewy snails, which taste just faintly of fresh cut grass.
