The field of gourmet pizza parlors in Phoenix is getting a little more crowded. Tommy V's Pizzeria opens Thursday on Camelback -- the little brother of nearby Tomaso's Italian restaurant.

Owner and chef Tomaso Maggiore says diners can expect classic pizza that'll be "the best this side of the Atlantic." Maggiore brags about a new wood-fired oven that was imported from Italy, and his main pizza maker is straight from Spaccanapoli.

As if that weren't sufficient, Maggiore claims his margherita pizza will meet official European Union standards for authenitc Italian pizza known as DOP or Denominazione di Origine Protetta. In order to claim the EU's DOP distinction, a pizza must meet a number of qualifications, including using San Marzano tomatoes and fresh mozzarella.

Maggiore says he'll mainly stick to the basics but has spruced up the menu with an ahi tuna pizza, and his personal favorite -- a pizza topped with prosciutto and figs.
