In January of this year, bakers Jason Raducha and Claudio Urciuoli opened Noble Eatery in a tiny building at 2201 East McDowell Road. For the past 10 months, the grain-focused restaurant has been one of the most buzzed-about lunch spots in town — in no small part because of the restaurant's limited hours. So far, Noble Eatery is open only from 10:30 a.m. to 3 p.m. Monday through Friday.

That's about to change.

On Friday, October 16, Noble Eatery's repertoire will expand to include once-a-week breakfast service. Breakfast will be served from 7 to 10:30 a.m. each Friday.

The breakfast menu, like the restaurant's lunch offerings, will highlight seasonal ingredients and housemade Noble Bread. Back in 2012, Noble Bread began as an artisan microbakery operated out of a garage and has since become one of the most popular bread bakeries in the Valley known for using wild yeast and organic flours.

Breakfast options will include a rotating selection of toast, pastries, fresh juice, and single origin coffee. Raducha has teamed up with an importer to get single origin coffees roasted specifically for Noble Eatery's breakfast service. The first featured coffee comes from the Mexican state of Nayarit and "shows flavors of chocolate, dried chilies, and plums followed by hints of spice."

The rest of the menu will be extremely fluid and the price point for breakfast will be even lower than during lunch; Raducha says he hopes to keep ticket prices below $10 a person.

Raducha and Urciuoli are also making some of the ingredients used at the restaurant available for purchase through the Noble Larder. The carefully curated selection of food products will include house-milled flours, grains, legumes, spices, local jams, olive oils, and vinegars.

Eventually, Raducha says he hopes to have the restaurant open for breakfast five days a week.

The lunch menu at Noble Eatery consists of an ever-changing selection of bites, salads, sandwiches, soups, and smorgas that tend to focus on heritage grains and legumes. To see the daily menu or for more information, check the Noble Eatery Facebook page
