The Herb Box at The Colony in Uptown Phoenix Opens Today — Here's A Look Inside

Central Phoenix diners looking for a new spot for a healthy meal will find it at The Herb Box, which opens its third Valley location at 8 a.m. today, Friday, April 8. The new restaurant is the first business to open at The Colony, a mixed-used adaptive-reuse project located at 5538 North Seventh Street in uptown Phoenix, and serves globally inspired cuisine with a focus on seasonal ingredients. 

We got to check out the space at a media event hosted before the restaurant's grand opening. The 3,100-square-foot restaurant offers indoor and outdoor seating for 140 guests with an airy, farmhouse feel that's achieved by high ceilings, exposed wooden beams, and floor-to-ceiling windows. 

Dark wood accents and modern light fixtures add a touch of sleek style to the open space, which includes an open bar off the dining room. 

The restaurant will serve breakfast, lunch, and dinner, and will offer a menu similar to that found at The Herb Box's two other locations in Scottsdale, one at DC Ranch in the north Valley and another at Southbridge in Old Town.

As at the two preceding restaurants, diners can expect a menu that highlights seasonal and vegetable-based dishes including Korean Fried Cauliflower (cauliflower tossed in Korean hot pepper sauce and served over quinoa with sugar snap peas and pea shoots) and Avocado Love (whole-grain toast topped with an avocado-lime smear, arugula, fennel, Serrano glaze, and lemon-honey vinaigrette).

An expanded brunch menu will also be available on weekends, and for diners on-the-go, The Herb Box offers a coffee bar stocked with pastries and baked goods that can be ordered either indoors or from an outdoor walk-up window.
