Machete Azteca

Machete Azteca is a West Phoenix restaurant that specializes in Mexico City-style fare. Most of the menu is dedicated to the house specialty, 16-inch quesadillas known as machetes, which are stuffed with regional delicacies like huitlacoche, squash blossoms and sesos. Huaraches, the long, oblong-shaped corn masa patties topped with beans, cheese and grilled meats, are available with toppings like spicy chorizo and bistec encebollado, a thinly sliced grilled sirloin with onions. On the weekends, the kitchen makes Texcoco-style barbacoa de borrego, a regional barbecue style that’s highly prized for its pit-roasted lamb. You can order the lamb barbacoa by itself, or served in a deeply savory consommé fashioned out of lamb drippings and a mildly spicy guajillo base.
