At Posh, a contemporary American restaurant tucked into the Optima Camelview condos, chef Joshua Hebert's tasting-menu-only "improvisational cuisine" concept is ambitious, but not a complete surprise; a stint in Japan acquainted him with omakase dining, where you entrust the sushi chef with orchestrating your entire meal. Here, you'll get a checklist to fill out - how many courses you want, which of the day"s featured meats and seafood you like (or don"t like; there's an all-vegetarian option, too), how done you like your meat, and other dietary restrictions. Of course, if you really want to see what Hebert can do, just check "chef"s choice" and enjoy the ride.
