The chef recently launched a pop-up concept at the Welcome Diner.

When you put your key in the ignition and turn on the radio, what station would play right now? Cat Power Radio. It's been one of those weeks for me. I don't do radio at all.

What's the last song played on your portal music player? "Pretty Peggy-O," Grateful Dead. On a scale of one to ten, Jerry (Garcia) and I would both give this a nine.

What's the first record you bought? Led Zeppelin, In Through the Out Door. I found it at a garage sale down the street. Records are where it's at.
 
What's the first concert you saw? Prince--the second best thing from Minnesota, next to (Bob) Dylan.

What's your favorite concert you've ever been to? I caught Nikki Sixx playing acoustic in a small bar in upstate New York when I was attending The Culinary Institute of America.

Preferred format: CD, vinyl, cassette, 8-Track or digital? (Pink) Floyd, Dylan, Dead, Eazy-E, early Snoop (Dogg), vinyl, for sure. Digital is all about convenience--which I enjoy very much.

What's your favorite CD? Right now, Garcia Plays Dylan. It will change your life.

Who is your favorite singer or band? Favorite singer--Ryan, no not Bryan, Adams. I can relate with his struggles through passion very well. His words are scarring at times.

Does you computer track how many times you've played something -- if so, what's at the top of the list? Pink Floyd, "Pigs (Three Different Ones)". The lyrics are epic.



What was your favorite new or new-to-you album from 2010? Pixies, Surfers Rosa.

What one song would you play if you had a world-wide radio audience? "I Shall Be Released"--Dylan playing if I played it at night, Garcia playing Dylan if it's in the morning.
 

What is your favorite local venue to see music? Kazimierz.

What is your favorite music video? In '86, Huey (Lewis and the News) released Fore!, their most accomplished album. I think their undisputed masterpiece is "Hip to Be Square," a song so catchy, most people probably don't listen to the lyrics. But they should, because it's not just about the pleasures of conformity and the importance of trends--it's also a personal statement about the band itself. That sums it up, great video. Both of them.
