33. Butterfish Tatki at Roka Akor

When they say the robata grill is the centerpiece of stylish Scottsdale Japanese restaurant Roka Akor, it's not just in a figurative sense. The charcoal-fueled behemoth literally sits in the front of the restaurant, on display for diners to watch as chefs prepare perfectly grilled meats and vegetables. The style of cooking, called robatayaki, is the restaurant's specialty but that doesn't mean you shouldn't try the raw fare, too.

I suggest starting your meal with the butterfish tataki. It's a simple but elegant appetizer that showcases pristine slices of silky butterfish. The tender fish makes a perfect contrast to crunchy spears of white asparagus, while fragrant yuzu contributes just a subtle hint of tartness. It's a melody of clean flavors and textures that sets the perfect tone for the rest of the meal.
