Joshua Hebert grew up cooking in Phoenix until the age of 21, at which point he moved to San Francisco. He accidentally ended up in Tokyo at the Miyako Hotel after four years in San Francisco, where he cooked for a year. Upon his return to town, he headed up several kitchens until finally opening POSH on New Year's Eve 2008.

I arrived in Phoenix with... if I remember correctly I was six or seven, so a shoebox full of baseball cards, a catchers mitt, and a sweet BMX bike.

If I was sitting down to dinner for six, my five dream dining companions would be... considering it says "Dream Companions"; the creator of Calvin and Hobbes cartoons, I'm pretty sure he would be really funny; Cindy Crawford (circa 1991...shows my age doesn't it?); Ryan Adams, from the Cardinals...after all, we are gonna need some music; Jello Biafra, former lead singer of the Dead Kennedys, cause his rhetoric on American History is extreme - and extremely entertaining; and Warren Buffet because he's a genius.

One place everyone who comes to Phoenix must eat is... all of my friends from out of town always want to eat at Bianco or Richardsons.........so one of those two.

One menu item this city could do without is...farmed salmon. Just had a rousing conversation with a few friends out about how bad farmed salmon is.

My last meal in Phoenix would be... big pot-luck with each my chef buddies all providing a dish, and will include all of my favorite employees and clients...several of whom are on this list too.
