Number 91: Bruleed Foie Gras Torchon at Posh Improvisational Cuisine


It's a little tricky to put this particular dish on my list of favorites, since the whole point of chef-owner Josh Hebert's restaurant is about defying a set menu and spinning dishes differently every day, based on what's fresh, what's available, and what diners are in the mood for. Truly, there is no real printed menu here in the traditional sense. It's more of a checklist.

But no matter how much Hebert mixes things up, chances are, you'll find some variation of his fabulous foie gras torchon here.

He brulees the surface of a silky slice of foie torchon, creating an appealing textural contrast that also adds a bit of rich, caramelized sweetness. Different accompaniments make it unique each time. On my latest visit, the dish was teamed with exotic Asian fruit -- a speckled chunk of dragonfruit and a juicy lychee. On top was an angelic halo of spun sugar. It was out of this world.

I'll always crave this dish, no matter how Hebert decides to dress it up.
