This week I'll prove that to you with this amazingly simple and delicious recipe - Balsamic Baked Potatoes! When I first saw the pin I knew I had to make it ASAP.
There are several things to love about the necessary ingredients. First, there are only six, the main ones being potatoes, balsamic vinegar, shallots and fresh rosemary. Second, while I can't guarantee the balsamic vinegar (because I already had some at home), I know that the rest of the ingredients can all be found at the Downtown Phoenix Open Air Market. If you haven't already made it a habit to shop there on Saturday mornings, please make appropriate arrangements. Finally, they are inexpensive!
I love recipes that don't require absurd ingredients that you'll never use again like whole milk powder. You won't find that here. The only potential leftovers would be sprigs of fresh rosemary, but the Rosemary Gin Fizzies recipe will take care of that. The fresh rosemary in the drink really brings out the rosemary in the potatoes.
I was able to turn the potatoes and the fizzies into a satisfying dinner with the addition of a simple salad. It would do nicely as a brunch too, with a quiche added to the mix. Whatever the case expect deliciousness to emanate from your oven... The smell while it's cooking is divine. Mmmmm, caramelized shallots!

Balsamic Baked Potatoes from Sweet Paul Magazine
Serves 4 20 fingerling potatoes, cut in half
6 shallots, peeled and cut in half
2 or 3 stalks rosemary
4 tablespoons olive oil
2 tablespoons balsamic vinegar
salt and pepper to taste
1. Preheat oven to 375F
2. Place potatoes, shallots and rosemary in a roasting pan and add olive oil, balsamic, salt and pepper.
3. Mix well until golden and soft, about 20 minutes. (Mine took about 30-40)

Rosemary Gin Fizz from sassyradish.comMake this Rosemary Syrup first:
2 cups water
1/2 cup sugar
4 rinsed rosemary sprigs
Combine all of the ingredients in a saucepan. Bring to a boil, then simmer over moderately low heat for 2 minutes. Remove from the heat and let steep for 10 minutes. Strain the syrup and chill. (The syrup can be prepared and chilled for up to 2 weeks.)
To make the Fizzies:
1/4 cup gin - I used Tanqueray.sassyradish recommends this or Bombay Sapphire
2 tablespoons fresh lemon juice
1 tablespoon rosemary syrup
ice cubes
cold club soda
1 rosemary sprig for garnish
1. In a tall glass, stir the gin, lemon juice and rosemary syrup.
2. Fill the glass halfway with ice; top with club soda. Garnish with the rosemary and serve.
