Sweet potatoes and jack-o-lanterns, tis the season! These fries are the epitome of what one can find on Pinterest - indeed, they're almost too cute... but in the end, I just couldn't resist. And I'm so glad I didn't.

The best part about this recipe is that most of the ingredients for these fries are probably already in your cupboard. Plus, they're perfect for Halloween parties and healthy snacking. If you don't celebrate, you'll have delicious fries quicker than the rest of us.

The downside to this recipe is that it takes forever to cut out all the jack-o-lantern faces. Try to find a helper and race to see who can do the most... or something to help get you through the tediousness of cutting miniature triangles. I gave up half-way through the batch.

Ingredients:

2 very large sweet potatoes 1/4 cup coconut oil, melted 3/4 teaspoon salt 1/4 teaspoon onion powder 1/8 teaspoon cinnamon 1/8 teaspoon cayenne

I found gigantic sweet potatoes at the farmer's market. I'm not sure if you can tell how large they are in this photo, but I ended up having to use one of the above recipes for each potato!

Peel the skin from the potatoes. Slice the tip ends from each side, leaving the thickest part of the middle. Use a sharp knife to cut a small "V" shape in the center of the sweet potato, then slice them into 1/8" thin slices. Use a small, sharp knife to carve jack-o-lanterns faces into each piece.

Combine the coconut oil and spice, along with the sweet potatoes in a Ziploc bag and mix until all the slices are coated.

Place the slices on a baking sheet in a single layer and bake for 20-22 minutes in a 400 degree oven.

YUMMY!

PS - You may want to cut back on the cayenne pepper if you are feeding these to young children who are sensitive to spicy food.
