One of the Valley's Southern-flavor mobiles recently gave up its wheels in favor of a brick-and-mortar home. But let's not forget about the other biscuit truck out there, one that's still hitting the Valley streets offering comfort food to the masses.
Liberty's Biscuits owner Rachel Millard isn't from the South, but that hasn't stopped the Arizona-born and bred entrepreneur from serving Southern fare on wheels.

What you need to know: It's all in the name -- this truck really is about the biscuits, which Millard says she chose as the centerpiece for her food truck because of the food's versatility and universal appeal. She's got a menu chock-full of staples like biscuit sandwiches and biscuits and gravy (because, duh) but also offers more intriguing creations like biscuit cinnamon rolls and biscuit pies.
The story: Millard says she grew up in a family that always spent time in the kitchen. Though she doesn't have previous experience in restaurant biz, her parents, both entrepreneurs, inspired her to try her hand in the food truck scene.
She came up with the design for the truck while a student at the W.P. Carey School of Business at Arizona State and thought a comfort food truck would thrive in the Valley by serving the hordes of hungry, homesick college students.
The truck launched last month to be eligible to run for the the 2013 Food Truck Rookie of the Year.
The food: It's common knowledge that biscuits are a comfort food staple, but Millard sees the simple food as much more. She says the biscuit is a food everyone can connect to and that because it can be easily adapted, will be a good item to build her menu around. She plans to use the biscuit as a vehicle to stretch her culinary legs and her menu -- which features "The Raji," a Nutella, peanut butter, bacon and banana biscuit sandwich -- shows she's got at least a few interesting ideas to share.
Where to find them: You can catch Liberty's Biscuits weekly at the Gilbert Farmer's Market on Saturdays as well as at the Gilbert Food Truck Court on Fridays from 5 to 9 p.m.
