Q. What's a rillette?

A. It's meat or fish that's cooked in seasoned fat, then pounded into a paste, and served cold as spread like smooth pâté. You can taste it on the new "entree par trois" menu at Bistro 24 in the Ritz-Carlton Phoenix. For just $20, diners can sample a combination of three of 15 classical French dishes, including rillettes of salmon or duck.

Q. I work nights, and can't find any good place to eat at 3 a.m. I'm in central Phoenix, and hate Denny's.
