Scottsdale's Pomo Pizzeria Re-Opening Wednesday as Dual-Concept Restaurant

It's been a busy year for the owners of Pomo, the three-year-old, certified authentic Neapolitan pizzeria from executive chef Matteo Schiavone and partners Stefano Fabbri and Mark Proto.

Since losing their restaurant's home at The Borgata of Scottsdale shopping center early this year, the Italian trio not only made plans to re-locate Pomo, they expanded it as well -- first with a downtown location that opened in May, and now with a location in Scottsdale's Gainey Village that opens at 11 a.m. Wednesday, October 30.

And this time, Pomo's got a tasty partner in tow.

Along with its top-notch pizzas, the 5,000-square-foot Pomo will house fresh-baked breads and Italian grocery items under the name of Forno Fabbri Italian Market & Mozzarella Bar, a new concept that pays homage to owner Stefano Fabbri's family's over 60-year-old bread-baking history in Sant'Agata Feltria, Italy.

"The ability to combine fantastic pizza, exquisitely baked bread, and Italian delicacies under one roof is a dream come true," says Fabbri. "We've tried to create a restaurant that will serve a variety of tastes, all by maintaining Italian authenticity in every menu item and beverage, décor, and presentation."

Forno Fabbri will include an on-site bread-baking facility that will offer a variety of breads and baked goods sold from 8 a.m. to 3 p.m. daily as well as a selection of coffees, croissants, brioche, panini, salads, and soups. From 3 to 9 p.m., Forno's all about Italian cheeses and wines under the supervision of sommelier Luca Todini. There also will be a Sogno Toscano olive oil boutique, where guests can purchase the same premium Tuscan olive oil Pomo uses in its pizza and other menu items.

As for the pizzeria, the new space will feature Pomo's massive wood-fired pizza oven, a wrap-around 2,000-square-foot patio and bar with a fire pit, and décor touches such as dark wood floors, high ceilings, and red and gray padded chairs.
