Squid Ink Sushi, the locally-owned Japanese restaurant from chef and owner Schuyler Estes, will open a third location in Scottsdale today.
The newest restaurant can be found at 7318 E. Shea Boulevard, on the northeast corner of Scottsdale and Shea. The space was most recently occupied by chef Payton Curry's short-lived restaurant, Taco Haus.

The restaurant will seat more than 160 people and features a large communal table, an open kitchen, and an outdoor patio and bar. Artist Justin Queal has also created a colorful mural to frame the sushi bar.
As at the other two Squid Ink Sushi restaurants, the menu blends classic and contemporary Asian dishes. Look for sushi rolls, grilled entrees, yakitori, daily ramen specials, fresh salads, and more. On the drinks side there will be Asian-inspired signature cocktails, an extensive wine list, draft beer, and both sake and sake flights.
Chef and owner Schuyler Estes opened the first Squid Ink Sushi in Peoria in 2010. A second location opened at CityScape in downtown Phoenix in 2013. All three restaurants specialize in contemporary Asian fusion.
