Move over, Pei Wei and Samurai Sam. Another fast-casual Asian eatery has set its sights on the Valley for expansion.
Denver-based chain, Tokyo Joe's, will open its first Arizona location later this month in Mesa and has plans to open dozens more restaurants in the area over the next few years. The restaurant serves sushi, rice bowls, and noodle bowls, as well as salads. And there will also be a tea bar.

The first Tokyo Joe's is scheduled to open to the public on Friday, May 30 at 1935 S. Val Vista Drive in Mesa.
The menu includes a small section of made-to-order sushi with options such as California roll and spicy tuna rolls in addition to a few more unique creations. The Joe's Roll features grilled shrimp, avocado, cream cheese, and cucumber, while the Surf & Turf Roll combines grilled steak, shrimp, cream cheese, red onion, clinatnto, avocado, cucumber, and gree dragon sauce. Each roll can be ordered in four or eight piece portions.
Nigiri sushi is available with tuna, salmon, and eel.
The restaurant also lets diners build their own rice bowls, starting with proteins including either dark or light grilled chicken, steak, salmon, or tofu. Carb options include white or brown rice or udon noodles. Diners can then choose from a list of sauces such as teriyaki, yakitori, dragon, curry, or peanut. Finally the restaurant offers veggie add-ons like edamame, bean sprouts, water chesnuts, bamboo shoots, and mushrooms.
There are also six Signature Bowls and three different Soup Noodle bowls.
