This month, two more food trucks joined the Phoenix Street Food Coalition, tipping its number of mobile specialty food members to over twenty-five.
The first, Aji Mobile Foods, is a father and soon team focused on Latin American fare and has made its first few appearances at the Avondale Farmers Market. The menu includes sandwiches like El Inca (Peruvian style grilled chicken breast with sun-dried tomatoes, and grilled onion) and El Hornado (Ecuadorian slow roasted pork with citrus pickled onions and ají Serrano), empanadas, and sides of black beans and plantains.
The second, starts with a kick-ass name.
Called Luncha Libre, the second new food truck will feature made-to-order quesadillas, tortas, and salads paired with home made salsas and guacamole. Still in its development stages, the truck wrap is currently being designed with the preliminary menu including specialties like The Green Demon (an al pastor torta with guacamole and salsa verde) and Tag Team (a quesadilla filled with red chile braised short ribs and green chile-potato.)
