Co-owners Joseph Aguayo and Matt Avilla tell me they're hoping to open their doors this Thursday.
The project has had its ups and downs, which weren't much of a surprise, given the renovation of the vintage 1930s building. Originally, they'd hoped to open late last year.
I've been chatting with the still-unnamed chef since last October about the construction of the restaurant, and was surprised when he told me that he recently parted ways with Aguaya and Avilla over some disagreements about the restaurant.
They're using their own recipes now, although the menu will be similar to the original concept: simple, homey Mexican dishes like red chile beef, green chile pork, and oregano lime rotisserie chicken, plus a Verde salad bowl. There will be breakfast items as well, like a chorizo and egg torta, along with homemade salsas.
Once Verde does open its doors, expect breakfast, lunch and dinner daily, from 7 a.m. to 9 p.m. They'll likely be open later on weekends.
