Yaya's Tacos Brings Gluten-Free and Paleo-Friendly Mexican Food to Metro Phoenix

For the health-conscious, Mexican food is often reserved for a "cheat day." A new food truck to hit Valley streets is out to change that. Yaya's Tacos bills itself as Arizona's first gluten-free and Paleo-friendly truck, and it might be headed to a Crossfit gym near you.

Esteban and Lizz Garcia are the owners of the new food truck, and serve Crossfit gyms mainly in the West Valley on weekends, but say they are looking for ways to expand.

The truck was named after their 5-year-old daughter, Yasenya, who "wanted it to be called Yaya's Family Tacos," says Lizz.

It hasn't been easy. "Six or seven" cauliflower tortilla recipes were tried before nailing the right one. And the result: "A lot of people say they taste like flour," Esteban says.

Some customers even inquire about purchasing packs of tortillas, something the Garcias are hoping to offer in the future.

Before opening the food truck, Esteban owned a Subway restaurant.

"We know the importance of local business and supporting the community," Lizz says.

They purchase their produce from Fury Farm, a locally owned farm in Goodyear partially owned by their CrossFit Fury gym owner. And the Garcias are starting to work with local ranchers to supply their meats.

Some of their menu items include grass-fed carne asada tacos, slow cooked green chili and free range chicken tacos, cilantro lime cauliflower rice, and pinto beans.

The owners have one thing they want their customers to walk away knowing: "That healthy food can be good food," Lizz says. "We want to bring love and passion to the masses."

On Monday, February 23, try Yaya's Tacos for yourself at CrossFit Archangel in Glendale from 3 to 6 p.m.
