Number 61: Chickpea ceviche at Bombay Spice
Can something be good for you and still have a cult following?
Absolutely, yes. Everything at Bombay Spice has a healthful spin, and yet, the place does Indian food with so much flavor that you're too busy salivating to consider how it may or may not affect your waistline.
The chickpea ceviche is a great example. Perfect for a hot Arizona day, this cool salad combines chickpeas with diced tomato, red onion, cucumber in a sweet and tangy sauce of tamarind, mint, and yogurt -- the complex layering of flavors is unforgettable. For extra texture, it comes with delicate, brittle papadum that offer a pleasantly crispy contrast to the tender chickpeas. Hard to believe you could eat a whole plate of it with no guilt.
