​Driving down Thomas toward downtown Scottsdale, it's hard to miss the attractive new Echo Coffee, which has been under construction for months (2902 N. 68th St.).

Curious? Me too.

Well, it just opened for business a few days ago, and if you've checked out the shop's website, owner Steve Belt's passion and obsessiveness is palpable.

Ever wondered what it takes to open up a coffee shop (and deal with the city), or to roast coffee beans, or to meticulously craft a latte? It's all detailed on Belt's blog.

Right now, the menu is limited to coffee and other beverages, as well as fresh pastries, but soon there will be a selection of sandwiches and salads as well. Business hours are 7 a.m. to 10 p.m.
