6. Kazuto Kishino of Hana Japanese Eatery

Hana Japanese Eatery is all about family. And we aren't just talking about how the restaurant's staff are always accommodating to families and kids. The restaurant is also a family affair, with Kaz Kishino and Kinue Hashimoto often in the kitchen, with their kids, Rick "Koji" and Lori Hashimoto, behind the sushi bar and working the floor. 

Kishino was born and raised in Niigata, Japan, and attended Saitama Koshigaya Culinary School from 1965 to 1967 under the direction of Mr. Shoji Seki. He received his Chorishi Manjo license in 1968, which allowed him to teach and cook throughout Japan. Kishino went on to cook at numerous restaurants in Tokyo, eventually becoming a technique chef at Kikkoman corporate headquarters.

The chef came to Arizona in 1980 to oversee the opening of Ayako of Tokyo at the Biltmore. He was the executive chef and created the menu for the restaurant, and a year later was tapped to open Japan Inn in Washington, D.C. Later, he went on to open restaurants in Jakarta, Indonesia; San Diego; and Los Angeles.

Today, he dishes on when he knew he wanted to be a chef and his pet peeve in the kitchen. 

My go-to place for Hong Kong-style pork in Phoenix is Super Dragon. 

The best-kept secret in Phoenix is ... nothing is a secret in Phoenix if it's good. 

I knew I wanted to be a chef when my grandfather gave me his knife. I was 18. That was 46 years ago. 

Phoenix could use more late-night restaurants and less fast food. 

My pet peeve in the kitchen is lack of focus and not standing properly when using a knife.
