Prado Lauches New Tapas Menu with Sweetbreads, Tongue, and More

Prado's new chef de cuisine, Peter DeRuvo (formerly of Sassi), hasn't wasted any time in the kitchen since he came on board. First up among the things he's rolling out is a new tapas menu, available starting on Friday, February 25.

Available in the restaurant's lounge, Mbar, the tapas menu looks interesting enough to merit an entire meal. Along with expected tidbits like cheeses, salumi, and fried calamari, there's an impressive lineup of offal treats -- something you don't see at many restaurants these days.

Think beef heart with pickled radish, arugula, and 20-year balsamic, a beef tongue sandwich with pickled vegetables and sriracha, cocoa-dusted sweetbreads with lentils and blood orange, and "Fiorentina-style" tripe with sofrito, polenta, and duck egg.
