Ever tried to make sushi at home and given up after one failed attempt?

Chances are, the mistake was not in your rolling technique, but in your mastery of the rice. Well, at Sushi Roku in Scottsdale, they take their rice very seriously, and they've decided to share the secrets of sushi rice so that we too may become Masters of our own Sushi.

Here are the essentials for making perfect sushi rice every time.

Rice Vinegar Recipe

Ingredients

1 Cup Rice Vinegar ( Marukan is an excellent brand)
2t sugar
1t salt
1 3x3 Kombu Kelp

Step 1: Place all ingredients into small sauce pot and bring to a simmer until the sugar and salt dissolve.
Step 2: Let stand for 24 hours and strain
Step 3: Transfer to storage container. Label, date and refrigerate.

Sushi Rice Recipe

Ingredients
1Cup Sushi Rice
1Cup Water
3oz. Sushi Vinegar

Step 1: Rinse and rub the rice in repeated changes of cool water until the water turns from cloudy to clear. Drain in a sieve.
Step 2: Add the water to the rice in a rice cooker. Rice cooker will stop cooking after 16 minutes and leave for 24 minutes to steam.
Step 3: Drizzle the sushi vinegar over the rice while the rice is still hot. Mix quickly with a rice paddle in a wooden bowl.
Step 4: Allow the rice to cool.
