The answer is, in a word, everything. If you haven't had the pleasure of making Singh Farms' acquaintance, there's no better time than the present. Despite the chilly weather, they've still got plenty of fresh-grown winter produce and some amazing vegetarian-friendly prepared foods.

Smoked Tomato Jam

We picked up a pint of this on a whim, and we're so glad we did. This jam, prepared by fave Phoenix food-truckers Pizza Daux, is a revelation when layered on a grilled cheese sandwich. It's simple, it's sweet, it's smokey, it's tangy, and it's sure to add a little something special to whatever you're cooking up this winter.

In case you're new to the world of Moringa, here's the lowdown: Moringa oleifera is a leafy tree that's basically the next trending superfood. Its leaves are insanely high in protein, calcium, vitamins C and A, and potassium. Singh Farms grows these trees and harvests their leaves. Try them fresh in a salad, or dried in a smoothie.

Apple and Arugula Wood-Fired Pizza

Singh Farms' on-site wood-fired pizza oven features some pretty tasty options, but this apple and arugula pie stole our hearts. A layer of rich apple butter is a nice substitute for the traditional tomato sauce. The apple butter is topped with a layer of sliced sweet apples, chopped, slightly bitter arugula, and slightly sharp blend of italian cheeses. A light drizzle of pomegranate balsamic brightens and completes this delightfully well-balanced pizza.

The Veggies

We didn't forget about the vegetables! Singh Farms had a great showing of squashes, pumpkins, and winter staples like potatoes and onions, but the root vegetables and hearty greens caught our eye. There was no shortage of fresh collards, bok choy, or of course, the obligate kale. They also had some fine looking kolrahbi, beets of all shades, perfectly fresh fennel, and turnips for days.

The Fruits

The citrus fruits at Singh Farms are truly spectacular - lemons the size of oranges, oranges the size of grapefruits, we're out of analogies now, but the grapefruits were also quite large. They even had to post a precautionary sign about the lemons, because apparently too many folks mistook them for their slightly sweeter sisterfruits.

Be sure to take home a bag of Pink Lady apples, too. We're more than willing to overlook some surface blemishes for these beauties; their sweet, crisp, firm flesh is #flawless.
