A lot of wines are made in large metal casks, and there are vineyards that will fit taps directly to them for a fresh glass pour.
Postino jumped on the wine-on-tap band wagon back in early 2010. And if you've made it over to Windsor (Postino's newly opened sister restaurant), you probably already know all of their wines by the glass are on tap.
So what's the deal with these metal casks of wine with fancy spigots popping up around the Valley? We've gathered a list of Pros and Cons to help weigh in on the answer.

Pros:
*It's more environmentally friendly in the sense that there aren't any glass bottles to ship, store, recycle, etc.
*Better wines at a lower price; less packaging cost means there are more savings to be passed on.
*Longer shelf life; the wine isn't susceptible to oxidation (in the same way it is in a open bottle) because of the nitrogen system used to pull the wine through the tap.

Cons:
*Most wines on tap have to be produced in bulk for consistent by-the-glass programs in restaurants. This just means no boutique gems.
*The keg design is also limited to wines that aren't meant for aging; often this will mean younger vintages.
*It obviously takes away from the romanticism of wine and has little place for the traditionalist.
