Chances are, if you've just walked into Asian Cafe Express for the first time, you might be a little overwhelmed. The menu is more like a novel, which normally isn't a good sign. However, if you have an experienced Hong Kong style chef in the kitchen, juggling all of these delicacies is really not a big deal. Still, if you don't feel up for the read, just skip to the soup section where you'll find many stand out options, most delicious of which being the preserved pickle and shredded pork soup.

Sure, this probably doesn't even remotely resemble your grandmother's chicken noodle soup (unless she was a chef-level Chinese culinary artist), but that doesn't make this soup any less comforting. Just try not to melt into a puddle of relaxation after your first sip of the fatty, yet so flavorful broth.

However, a rich broth isn't all this soup has to offer. Thin chunks of pork, briney and satisfyingly funky fermented pickles, and a bunch of cabbage add to the pot. Then there's the noodle. While you have your choice of noodle style in the bowl, the paper-thin, flat, and wide fresh ho fun noodles are certainly the way to go.
