Inviting guests to, "embark on a cross-country road trip down the main streets of America," Proof, the comfort food restaurant coming to the Four Seasons Resort Scottsdale, even provides the transportation (not really) by featuring a railroad track running through its dining room.
Set to open later this fall in the former space of Crescent Moon, the breakfast, lunch, and dinner restaurant will feature home-style American classics like fried green tomatoes, shrimp and oyster po'boys, and chicken and waffles with bacon and bourbon syrup.
And just to keep the nostalgia level dialed to "high," there's an old-fashioned soda fountain, too.
If a milkshake or malt isn't your thing, Proof will offer beverages of a more adult nature like small-batch and craft-distilled American spirits with an emphasis on bourbon and whiskey. Plus, more than 50 microbrews will be available as well as wine and wines on tap.
The 2,500-square foot space (plus patio) will be done up canteen-style.
And if you've got little ones in tow, Proof will offer kid-friendly stuff like nostalgic cartoons broadcast during breakfast, "TV Dinner" menus, and seasonal handmade candies.
