You never have to feel guilty about eating the light, fresh European-style cuisine that Essence Bakery owner and chef Eugenia Theodosopoulos serves at her two restaurants. But we dare you to resist the draw of the Essence pastry case, where you'll find a colorful array of macarons and other sweet treats. It's impossible.
So before we dig into our pumpkin macaron and perfectly flaky butter croissant, we usually like to fill up on something savory. Responsible eating is important, after all. Most times we go with Theodosopoulos' Lemon & Basil Chicken Salad sandwich, which has been a menu staple for quite some time. The salad doesn't skimp on pieces of moist free range chicken that's complemented with pieces of diced onion, lemon, and fresh basil.
When combined with thin slices of cucumber and crisp leaves of spinach, this salad becomes the perfect lunch to satisfy without feeling too heavy. Even the brioche bun is a memorable part of the meal -- slightly sweet, but also chewy, soft, and sturdy.
