Do you dream of dining at the historic James Beard House in New York? Yeah, us too. And though we may never have that chance, chef Josh Hebert of Posh Restaurant in Scottsdale will head there soon to cook a dinner. But he's not leaving his Valley fans without getting in on the fun -- he'll host a special James Beard House preview dinner just a few days before he heads to the Big Apple for the event.
The six-course dinner will be held Friday, April 4, three days before Hebert will cook at the James Beard House on Monday, April 7.

The menu, called the "Art of American Omakase," is meant to highlight Hebert's improvisational approach to food, as well as his creative use of ingredients. It includes:

- Moroccan spiced ceviche with a "Dahl" tostada
- Escargot beggar's purse with rich man's caviar sauce and uni foam
- Lamb crepinette with yogurt mint sauce
- Corn sorbet with corn "bread" pudding and bourbon corn caramel sauce
Reservations, which are required, are available from 5 to 9 p.m. The dinner costs $75 per person. Call 480-663-7674 or visit the Posh website for a reservation.
