I'm the type of person who needs to eat every three hours, at least, or I start to feel like I'm going to pass out. This isn't a problem when I'm at home, but it's a different story when I have to work.
The challenge with having to work is learning to plan meals ahead. I stink at planning ahead, which is why I've lately found myself at work in a miserable, hungry state with zero food options. Unless you consider vending machines an option... bleh.
Thankfully, Pinterest offers an abundance of ideas. While most of the things on Pinterest are overly indulgent, you can definitely find some nutritious options if you're following the right people. This week I decided to tackle my food dilemma with this super healthy Avocado and Kale salad.
I love avocado and I love kale. I love how eating kale makes me feel vibrant and healthy and smart, because I'm eating kale instead of a Snickers bar. I know I've made the right choice.
If you make it a priority to choose mostly healthy options, you won't feel as bad when you eat 75% of the Nutella recipe (yeah, I'm guilty of that). It also means that you can eat every 3 to 4 hours without packing on the pounds. Let's be real. It's almost summer time -- it's time to shed that winter coat. This avocado and kale salad is where it's at. Plus, it's exceedingly easy to make.
I put this salad together in the early afternoon and ate it about 6 hours later at work. I was very happy with the way it held up! Kale is perfect because it doesn't wilt like most lettuces and the avocado was still bright green due to the lemon in the dressing. I'll definitely be making it again.

A word about working with kale. If you're not used to it, it can feel a little too crunchy, or hard to chew, which is why I've gotten in the habit of massaging my kale. HAHA! Yes, it's kind of funny, but it works. You make the dressing and then use your fingers to gently rub it into the leaves. This breaks down the kale slightly and makes it easier to chew. Plus, it absorbs the flavor nicely.

Ingredients: 3 cups torn kale 1/2 cherry tomatoes sliced in half 3 tablespoons thinly sliced red onion 1 ripe avocado
For the Dressing: 1 teaspoon honey 1 teaspoon red wine vinegar 2 tablespoons extra virgin olive oil juice of half a lemon large pinch of salt
Directions:*What follows is slightly different from those in the original italktofood recipe. 1. Prepare dressing and pour over the torn kale. Gently massage the dressing into the kale. 2. Toss the kale with the remaining ingredients. Allow the salad to marinate in the fridge for 30+ minutes.
