The Great Pho King Food Truck to Open Restaurant in Scottsdale Next Week

For the past three years, the Great Pho King food truck has been a roving source for both traditional and fusion Vietnamese fare, including bowls of noodle soup, pot stickers, and banh mi burritos. Started by owner Mike Baum and chef Eddie Pham, the truck's become a familiar sight at food truck events and festivals all over the Valley.

Soon, however, you'll be able to get your Pho King fix without having to dine on the street. By next week, the Pho King Kitchen is expected to open at 8018 East Thomas Road in South Scottsdale. The restaurant is located just east of the intersection of Hayden and Thomas Roads on the north side of the street. 

According to the Great Pho King website, the restaurant will offer a full bar, patio, and expanded menu. 

As we told you last month, Baum now runs the truck (Pham has since departed) and has shifted the focus to Vietnamese-Mexican fusion food. Some of the truck's creations include the Burrito Phorrito, which includes grilled steak with stir fry veggies, melted cheese, kimchi, pickled veggies, cilantro-lime rice, and sriracha mayo wrapped in a tortilla.
