West Valley residents have a new destination for farm-to-table cuisine in The Vic Bar + Kitchen, a restaurant now open at The Victory Club at Verrado in Buckeye. Perched 250 feet over the Valley, the restaurant features floor-to-ceiling windows that offer panoramic views of the Valley, from the downtown Phoenix skyline to Four Peaks.
Chef Robert Douglas oversees the kitchen and brings experience working in restaurants from South Carolina to California to the project. Douglas aims to highlight local and seasonal ingredients with The Vic menu, which includes sections such as "Graze," "Chow Down," "Share," "Nibble," and "Nosh."
Diners can expect dishes such as pimento cheese-crusted tenderloin (a center-cut roasted tenderloin with house-cured pimento cheese, purple potato and apple hash, and Mikuni Wild Harvest’s aged finishing vinegar) and the Vic white pizza, which comes topped with housemade ricotta, super-aged gouda, Crucolo, béchamel, crispy pancetta, and a splash of apple Pok Pok Som.
To pair, diners can choose from a selection of craft beers, cocktails, and wine, as well as a coffee and smoothie bar serving locally roasted coffee, cold-press juices, and small bites.
The restaurant is open from 7:30 a.m. to 4 p.m. Sunday through Tuesday and from 7:30 a.m. to 9:30 p.m. Wednesday through Saturday, with the last dinner seating at 8:30 p.m.
