It's been about four months since we told you James Beard award-winning pizzaiolo Chris Bianco would be opening a second restaurant at Town & Country in Phoenix. At the time, he told us he planned for the new spot to be smaller and more pasta-focused than his other restaurants, but the chef's been tight-lipped about other details, including the restaurant's name.
Until now. Yesterday Bianco confirmed to us the new spot will be named Tratto. He hopes to be able to open the doors by the middle of April.
"I put everything into this place," Bianco says of the new project, which has been described as a "pasta-focused trattoria" until now. The restaurant will not be a casual dining experience, Bianco says, and will have a more expanded bar and cocktail program than what's currently offered at his three other Valley restaurants: Pizzeria Bianco in downtown Phoenix, Pane Bianco, and Pizzeria Bianco at Town & Country.
Tratto takes over a space adjacent to the second Pizzeria Bianco location at Town & Country. It was most recently occupied by a Greek restaurant.
