She’s not here year-round, but when she is, the desert is a better place — for eating lobster, that is. November through May, she moves from place to place in her state-of-the-art food truck, serving responsibly harvested Maine lobster, which she says is healthy, low in fat and cholesterol, high in protein, good for you, and off-the-chart delicious. Her seafaring menu, which also offers clams, shrimp, and other seafoods, includes lobster served several different ways. The Lobster Lady’s most popular is the wicked good lobster roll, made with chunks of chilled lobster meat tossed with a touch of lemon aioli in a butter grilled roll. Try it warm, drizzled with melted butter, for a real treat.
