When chef-restaurateur Aaron May and his partner-dad Brad opened the first Over Easy in 2007 in a former Taco Bell on 40th Street, they had an instant hit on their hands. Even though they'd added on a small shaded patio -- bigger than the restaurant's interior -- they still had long waits on the weekends.
So they moved to a larger space on Indian School near 48th Street, and a year later, opened a second location on Bell in North Scottsdale. Now the pair have brought the breakfast concept, featured on Diners, Drive-ins and Dives to the Southeast Valley.

Over Easy has opened in Mesa at 6451 E. Southern Avenue (between Power Road and Superstition Springs Boulevard, 480-832-3447) and in Gilbert at 211 E. Warner Road, Suite A-103 (at Gilbert Road, 480-507-3447. Both locations are open from 6 a.m. to 2 p.m. every day.
Customers can expect to find familiar menu items at the new OE locations, including chilaquiles, chicken-fried steak, the Wolfpack (eggs, bacon and cheese sandwiched between two layers of hash browns), caramelized banana and pecan brioche French toast and waffle dogs -- the latter made famous by Beau MacMillan on Food Network's The Best Thing I Ever Ate.
