Since drive-thru salads were introduced at Gilbert's health-minded Salad and Go in January, the Valley's pull-up-to-the-window offerings have stayed mostly on the conventional side.

Thanks to a new drive-thru/walk-up joint in Peoria, those on the go can get gourmet tacos as well as other, more challenging car eats like dippable Spanish-style tapas, cilantro lime rice, chips and salsa -- even flan -- whenever the need arises. And the menu's got Vegas written all over it.
Called Brushfire Tacos y Tapas, the new drive-thru/walk-up window restaurant opened about a month ago at 8395 West Thunderbird Road (between 83rd Avenue and Loop 101) in Peoria.
Featuring a small, affordable offering of five standard tacos, tapas snacks, sides like cilantro lime rice and pot beans, and a range of mild to super-hot signature salsas, Brushfire's menu was created by John Simmons, chef-owner of Firefly Tapas, a three-restaurant chain in Las Vegas. (Simmons recently made the news last month when one of his Firefly restaurant locations permanently closed after 200 of its customers fell ill with salmonella poisoning.)
