Cuff: New Restaurant to Open in Historic Downtown Glendale Next Month

The West Valley hasn't exactly been a destination for ambitious chefs looking to make their mark in the local culinary scene. But with a new restaurant coming to downtown Glendale, that may start to change.

Later this fall, Cuff, a New American Restaurant, will open its doors at 5819 West Glendale Avenue in the heart of the city's historic downtown. The restaurant comes courtesy of executive chef and owner Tom Harvey, formerly of Eddie V's in Scottsdale.

Harvey and business partner David Chang (no, not that David Chang) are hoping to open Cuff on by mid-September>. The restaurant is part of three projects that Chang, a developer, has planned for downtown Glendale. Two of these projects are dining establishments; the third will be an event venue adjacent to Cuff.

The new restaurant's menu will include dishes such as a charcuterie board ($10), fresh burrata ($8), and fried shrimp po' boy sandwich with lettuce, tomato, and remoulade ($11). Other options will include Cuff posole with roast pork potstickers, hominy, tomato broth, cotija and cilantro ($11) and shrimp and grits with andouille tomato gravy and a poached egg ($10).

Harvey, who opened Eddie V's in 2011, says he left the Scottsdale restaurant this spring in order to focus on the new restaurant. To start, Cuff will be serving lunch only -- the plan is to start dinner service sometime in September. The chef says he was drawn to downtown Glendale in part by the city's walkability.

"We just really feel that there's tremendous growth potential specifically in downtown Glendale," Harvery says.

Harvey says he plans to make good use of the restaurant's smoker. The chef says he tends to incorporate Southwestern flavors into his cuisine and that his aim is to make food "that taste good with craft beer."

And speaking of craft beer, Cuff will offer a full bar with both classic and original cocktails and a selection of craft brews.

The building Cuff will call home was originally built in 1895 and Harvey and Chang aim to retain some of its historical touches. That means they're keeping the original tin roof and bricks, but adding a private back patio.
