Tacos may very well be the perfect food, but let's face it, the standard Meximerican fare can get a bit stale after a while. Taco the Town is here to highlight some of the more unusual Mexican finds in the Valley. 

This week: Huevos Rancheros from Gallo Blanco

¿Como se dice?: Huevos rancheros are the perfect alternative to tired eggs 'n' cheese in the morning. Just make sure to get your order in before the bleary New Years hang over ends and the resolutions begin. (Egg yolks and ooey gooey cheese aren't exactly waist-friendly.) Gallo Blanco still reigns supreme in our quest for huevos rancheros perfection. Over easy egg yolk oozes out atop a pile of crisp tortillas, salty queso, and spicy tomato-based salsa. 

Not all huevos rancheros are created equal though, and we've had the misfortune of running across some seriously iffy platters in our quest for b-fast perfection. Don't believe us? Check out the platter of "huevos rancheros" served up by Riva's (and unfortunately many other) cheap-o Mexi joints across the valley. Those huevos gone rotten should strive to be a little bit more like Gallo's perfectly spiced ranch-style eggs.

La Comida y El Sabor: Gallo Blanco's huevos rancheros are a seriously tasty breakfast platter, and best of all, it's served all day long. One of the tastiest components of this dish is the spicy tomato-based chile sauce smothering the huevos. Blended smooth with a piquant bite, it's the perfect accompaniment to a stack of crisp tortillas, sandwiching ooey gooey queso, and topped with a couple eggs fried to your specifications. So you can opt for the oozing over easy version, or hard fried yolks. (We suggest the over easy version. A bit of yolk ties the entire dish together.)
 
Bring a bit of México to your kitchen: Say adios to 2011 and ring in the new year with an easy to make, yet still pretty to gaze upon, platter of huevos rancheros. It's essentially just a stack of tortillas, eggs, cheese, and spicy tomato salsa. This basic recipe for huevos rancheros can easily be modified to include any leftover meat, beans, or veg you may desire. Fry up your ingredients, stack 'em high, and indulge.
