After a turbulent route to ownership, Taco Guild's husband-and-wife duo, Dominick Scarpinato and Johannah Ortiz, have turned it into a flourishing culinary sanctuary.
Twelve years ago, Dominick started out in the club sector as a humble bouncer. His experience in management, operations, barbacking, and bartending led to a strong desire to own and improve a restaurant. His route eventually intersected with Taco Guild, and he worked closely with the company for two years. Despite the initial resistance from previous owners, Dominick jumped at the chance to acquire Taco Guild in September 2023.
"The first time I walked into Taco Guild, I knew it was special," Dominick reflects. "I knew it was a place where I wanted to hang my hat. Every action I took was for the betterment of Taco Guild and the hospitality industry as a whole."
Dominick works to cultivate a culture of growth and opportunity, which demonstrates his commitment to Taco Guild. Taco Guild aims to establish a caring environment, as evidenced by the fact that many of its employees have climbed through the ranks. "Nothing makes me happier than seeing someone start at an entry-level position and work their way up," Dominick shares. "That is the culture I strive to perpetuate."
Steven Rubly, General Manager; Cody Thew, Bar Manager; Sara Botma, AGM; and Ashley Gaalema, Branding and Events Manager, are all prime examples of this culture. "I have trained and promoted each of them. They relentlessly hone their skill set on a daily basis. I couldn't be more proud of their work, how far they've come, and where we land in the future," Dominick proudly states.
Under Dominick and Johannah’s stewardship, Taco Guild has embraced a renewed focus on community, family, and quality. Transitioning from corporate ownership to a family-owned and operated establishment, Taco Guild now sources local products and operates a scratch kitchen, enhancing the authenticity and freshness of its offerings.
Dominick’s mixology accolades and experiences with award-winning organizations have enriched Taco Guild's culinary and beverage menu. "Having the first cocktail menu at the Salt Cellar be mine is a thought that constantly humbles me," Dominick says. His innovative approach, honed at places like Pig and Pickle, has brought exotic and creative flavors to Taco Guild.
But like all businesses, Taco Guild has had difficult moments. "It's a restaurant. Every hour is a challenge," Dominick admits. Yet, his philosophy of taking care of the community and viewing his role as a caretaker rather than a boss has been instrumental in overcoming these hurdles. "Take care of the community around you, and the rest will follow," he further describes.
Dominick and Johannah envision a future where Taco Guild expands its footprint, bringing their mission statement to new communities. Dominick’s dream is to see Taco Guild flourish and to pass on his knowledge to the next generation, including his oldest daughter, who will soon be old enough to work in the industry. "I hope by then we will have expanded the Taco Guild concept and are able to forge communities in new areas," he says.
The new era of Taco Guild is marked by a commitment to community, family, and quality. With a focus on local products, a scratch kitchen, and a nurturing work environment, Taco Guild is poised to reach new heights under its dedicated new owners.
