Trader Vic's is the undisputed king of the Mai Tai, and there's no messing with an old school original. Their tribute to tiki was developed in 1944 in Oakland, California, and since then the refreshing blend of citrus, almond, and rum has become a mainstay of the tropical barfly.

Ingredients:
1 oz. dark rum
1 oz. light rum
3/4 oz. fresh lime juice
1/2 oz. orange curacao
1/4 oz. orgeat syrup
1/4 oz. simple syrup
Optional garnish: fresh sprigs of mint, lime, and fruits-on-a-stick like pineapple and maraschino cherries
Combine all ingredients in a cocktail shaker filled with ice. Give it a vigorous couple of shakes and strain into a tumbler filled with crushed ice. Garnish with a sprig of mint and as many fruity accessories as you like. Light a tiki torch or two, put on some island jams, and enjoy.
