This meat-intensive venture of restaurateurs Bob and Sally Ann Molinari and Bret Pont, owner of Hobe Meats, the over 50-year-old custom butcher shop in Phoenix, features freshly butchered offerings of custom meats to take home as well as meaty Mexican-inspired street foods and libations to enjoy on the spot. You’ll want to start with the pig wings, two grilled petite pork shanks coated in a spicy-sweet chipotle glaze, then move on to simply delicious tacos and a shrimp and corn tamale of the gourmet kind. The Pig’s centerpiece, a gleaming glass case of fresh-butchered proteins, offers up top-notch selections such as house-aged Prime steaks, daily-caught seafood, and boutique meats like venison, goose, and even kangaroo.
