Heinrich Stasiuk, owner of Brick, the gourmet pizzeria that opened last year in the Arizona Center in downtown Phoenix, says Timo, his new restaurant opening next week in Sunnyslope, will take wine bars to the next level.
"We're going to have a selection of over 30 wines by the glass," Stasiuk tells me. "And the food won't just be cheese plates, we'll offer a lot of different dishes at affordable prices so people can go home full."
Stasiuk adds the wines will be served via Riedel glassware, heralded by Robert M. Parker Jr. of The Wine Advocate as, "The finest glasses for both technical and hedonistic purposes."
The food at Timo, which means thyme in Italian, will be headed up by chef and co-owner Mercer Mohr, who is currently at Brick and was previously at Ken's Creekside in Sedona and the Four Seasons restaurant in San Francisco.
Stasiuk tells me he's made extensive renovations inside the building, which used to house Bomberos, a South American wine bar, such as knocking a wall down, building an open bar and kitchen, and installing a custom-built wood oven.
"We don't have gas burners or stoves," Stasiuk says, "so all the food is wood-fired from the oven. We bake all our bread here as well."
Timo's lunch and dinner menu includes items such as Spanish-style tapas, pizzas, flatbreads, bruschetta, and wood-fired sandwiches along with an extensive beer and wine list. There's also a weekend mimosa brunch and a late night menu from 10 p.m. until midnight.
