95: Fattoush Salad from Al-Hana Restaurant at Baiz Market

In a city built on a grid, it's sometimes hard to find buried treasure. But that's how we think of Baiz Market, a Middle Eastern grocery that manages to be completely off the beaten path and in the center of town at the same time.

You won't have trouble finding Al-Hana, the counter service restaurant in a far corner. We love the cheese pies, the chicken shwarma and the kebabs, but the dish that really gets our mouth watering is the fattoush salad.

Lately, we've noticed fattoush popping up on trendy restaurant menus. None we've had compares to this simple dish of romaine lettuce, sliced tomato and Persian cucumber, tossed in oil and vinegar (is that lemon zest we taste?) with oregano, thyme, salt and pepper. Deep-fried pita chips offer a treat atop a healthy dish, and they don't get soggy like others we've sampled.
