With the Arizona State Fair headed our way at week's end, we at Chow Bella decided on our latest  challenge: Create a "fair food" that kicks it up a notch. No one dared to cook with bugs, but we did have some creative entries. Check back later this week, when critic Laura Hahnefeld will choose her favorite.

First up: Nicole Smith's Lemon-Thyme & Blackberry Snow Cones

Hmm, fair food that's desirable to my fellow Chow Bella foodies? I must admit it took me a couple days to think on this one. But like any crazy good idea -- or just plain crazy -- it came to me just before falling asleep one night. Snow cones! Because, well, who doesn't love the tongue numbing goodness of those icy little suckers.

After some mediation with my all-knowing mother, we decided on a kick ass syrup. With a little sweetness of fresh blackberries, a ton of tartness from lemon, and a subtle earthy flavor of fresh thyme, the game was on.

Ingredients:
2 pints fresh blackberries
1/4 cup honey
2 teaspoons sugar
4- 5 sprigs of thyme
1 cup lemon juice

Lemon Thyme simple syrup: Boil sugar and water. Add in lemon juice and fresh thyme sprigs and let thyme steep for two hours. Remove thyme and refrigerate result.

Blackberry simple syrup: Place blackberries and honey in a pot and add just enough water to cover blackberries. Bring to a boil and refrigerate result.

Use a blender to crush ice. Scoop, douse with simple syrups, and enjoy.
