Mesa-ites eating a vegetarian or vegan diet now have one more option for healthy breakfast and lunch dishes that go easy on the wallet: The Cutting Board Bakery & Café
Opened last week and located at 2235 South Power Road, just south of Baseline Road, The Cutting Board will feature vegetarian- and vegan-friendly food along with juices, gourmet coffees, and house-made breads and pastries.
"We found a whole community interested in learning about nutrition and wanting healthy, organic, and locally grown foods," says owner Krystal Macdonald, who owns the cafe with her husband, Sean. "We want to serve them and grow the community along with our business."
Here's what diners can expect.

For breakfast, there's Santa Monica French toast ($5.50) featuring bread soaked in orange juice and spices and topped with blueberries, almonds, and maple syrup; sweet potato hash ($6) made with potatoes, carrots, kale, and herbs; and a tamari (a wheat-free naturally brewed soy sauce) tofu English muffin ($5).
At lunch, think a black bean burger with a side of organic blue corn chips and salsa ($7.50); the Tacos Duo ($7) made with "nutty meat," tomatoes, and salsa; and the Vedg-Head sandwich ($7) packed with things like heirloom tomatoes, jicama, avocado, cucumber, and spinach. Daily-made soups will also be available.
There's also over ten juice and smoothie selections to choose from like the PB&A (pears, banana, almond milk, and flax seed) and the juice called the Blue Crush made with blueberries, jicama, cucumber, lime, and pears.
And for those craving a sweet treat, look for the Cutting Board's ever-changing display of scratch-made baked goods.
The Cutting Board Bakery & Café has planned an official grand opening celebration for Saturday, October 12, with family-friendly activities from 7 a.m. to 3 p.m. and a special ticketed event for adults from 6 to 9 p.m. For more information, go to the cafe's website.
